Who doesn’t love a good weeknight get together to break up the week? A friend of mine just became a Thirty-One consultant (shameless plug: check out her website), so it was party time! Considering I typically have trouble getting dinner on the table for myself during the week, I knew I needed some easy weeknight entertaining ideas. I’ll admit, frozen pizza crossed my mind… but there is no way my mom (a master home-cook) would ever let me do that! So here is what I decided on:
Main Entrée: Italian Chicken. If you have never made it, you NEED to for your next get together. It’s prefect for a crown and SO easy! Chicken, Italian dressing, and pepperoncini peppers. That’s. All. Serve with mini sandwich rolls.
Sides: I also wanted to have some fruit, veggies, and crackers with hummus. I decided to buy all of this, and even splurged on the tray of pre-cut assorted fruit. I know it’s more expensive that way, but it saved me from having to buy bigger cartons of several different kinds of fruit. And from taking the time to wash, prepare, and cut that fruit. A win in my book.
Dessert: This was the one thing that I actually had to prepare. I’ve had my eye on this Funfetti Cake Dip recipe for a while now, but didn’t have an excuse to make it until now. This is also super easy with few ingredients: 1 box of Funfetti cake mix, 2 cups plain yogurt, 1 cup Cool Whip, and extra sprinkles. Combine until there are no lumps, and serve with animal crackers or Nilla wafers.
Despite some crazy midwest weather cutting the party a little short, it was a success, everyone enjoyed the food, and it was a nice treat to have a get together during the week!
